Krinkle Cookies

HOLIDAY BROWNIE KRINKLE COOKIES

Start with Mindy’s famous Brownie Krinkle cookie recipe, add her Limited Edition Deliciously Dosed™ Holiday Chocolate and serve up a fun dessert!

INGREDIENTS (24 COOKIES)

  • 4 oz unsweetened chocolate, chopped 
  • 1-3/4 cups flour 
  • 1/4 cup cocoa powder 
  • 1-1/2 tsp baking powder 
  • 1 tsp kosher salt 
  • 1 tsp flaky sea salt 
  • 4 large eggs, room temperature 
  • 1 tsp vanilla extract 
  • 1/2 cup canola oil 
  • 1-3/4 cup sugar 
  • 1 cup confectioners’ sugar
  • Mindy’s Dark Chocolate Peppermint Bark (10mg)

 

PREPARATION:

  1. In a heatproof bowl set over (but not touching) barely simmering water, melt the chocolate, stirring occasionally. Keep warm. 
  2. In a separate bowl, whisk together flour, cocoa powder, baking powder and salts. In small bowl; crack eggs and stir in vanilla.   
  3. In a stand mixer fitted with paddle attachment, mix oil and sugar on low speed for 1 min.
  4. Add warm chocolate and mix to combine for 30 seconds.
  5. Add egg and vanilla mixture, combine on medium speed for 30 seconds until well combined.
  6. Add dry ingredients and combine on medium speed until dough comes together, but still looks shaggy, approx. 30 seconds.
  7. Remove from stand mixer and mix by hand until dough is well blended.
  8. Cover bowl with plastic wrap and refrigerate until firm, at least 30 min or overnight.
  9. Pour confectioner’s sugar into wide shallow bowl.
  10. Preheat oven to 350 degrees.
  11. Prepare 2 baking sheets with non-stick spray or line with parchment paper.
  12. Portion the dough into 24 mounds, roll into balls. Individually roll each dough ball in powdered sugar until covered completely.   
  13. Evenly space 12 balls on each baking sheet.
  14. Make a small indentation with your thumb in the middle of each ball, do not push through to bottom of pan.
  15. Bake for 8 min; rotate pan and bake for another 4 min.
  16. Let cookies cool for 2 minutes.
  17. Add Chocolate to middle of each cookie and cool completely before removing from pan.
  18. Store in airtight container.    

PREP TIME: 30-45 min 

SERVE WITH DARK CHOCOLATE PEPPERMINT BARK (10MG SECTION) 

Serve one square of Mindy’s Dark Chocolate Peppermint Bark per person. Cut each section into smaller pieces and place one piece into each cookie indentation right after baking to enhance flavor and presentation.
